The CM401 is for people who want café-style variety, meaning iced drinks, concentrated shots and a frother; the CE251 is for people who want a big, hot, programmable pot of drip coffee and nothing else.
Ninja sells both of these as coffee makers, but they serve different mornings. The CM401 Specialty is a small brew bar with four brew styles, six sizes from a single cup to a 10-cup carafe, and a fold-away milk frother. The CE251 is a classic programmable drip machine with a 12-cup carafe, two strengths, a 24-hour delay timer and an adjustable warming plate. Neither uses pods; both take ordinary ground coffee.
What the CM401 gives you
Variety without pods. The Specialty setting pulls a concentrated brew that holds up in milk, so combined with the frother it makes a credible latte or cappuccino without an espresso machine on the counter. Over Ice brews hot directly onto ice at adjusted strength, which keeps iced coffee from tasting watered down. Because it scales from one cup to a carafe, it covers a solo weekday and a weekend table with the same machine.
What you give up is capacity and scheduling. The carafe tops out at 10 cups, and there is no delay brew; the machine starts when you press the button.
What the CE251 gives you
Simplicity at scale. Twelve cups, programmable the night before, kept hot for up to four hours on a plate you can adjust rather than scorch. There is nothing to learn and little to clean. If your household drinks a lot of plain hot drip coffee, this is the sensible design.
What you give up is range. There are no single-cup sizes, no iced mode and no frother, and none of that can be added later.
